Tips for Whipped Brie

With just a few ingredients, this recipe is super simple, but we have a few pointers to make it totally foolproof.

  • Goldilocks of Brie – Warmed brie can often take on a weird texture after it cools, so it needs to be enjoyed while hot. Room-temperature brie can be cakey and dry. Whipped brie meets in the middle with great texture, and it lasts longer.
  • Use a double or triple cream brie. This yielded the best, silky results.
  • Use a serrated knife to cut off the casing while the cheese is still cold. Pry up little embedded bits after the cheese has softened to prevent wasting precious brie.
  • Use the whisk or paddle attachment on a stand mixer at low speed. It takes about 10 minutes, so you can do this with an electric mixer, but you’ll stand there the whole time. I’m not sure you’ll have enough arm power to do this by hand.
  • Do NOT use a food processor. Perhaps mine is just too high-powered, but after 5 minutes, the brie was so agitated that it heated, separated, and curdled.
  • Use enough brie. You need a larger portion for it to be able to whip properly — I’d use a minimum of 13 ounces.
  • Do not let the brie get too warm, and DO NOT microwave it to make it warmer faster. It will separate when you whip it.

  1. Remove rind. Use a serrated knife to remove the rind from the cold brie.
  2. Add cheese to plate. Place cheese on a plate or cutting board to allow it to come closer to room temperature.
  3. Whip cheese in mixer. Transfer the cheese to the bowl of a stand mixer fitted with a whisk or paddle attachment.Adjust the mixer to the recommended setting an allow it to whip for the recommended time.
  4. Return to bowl. Periodically scrape the sides of the bowl with a rubber spatula.When finished mixing, use the same spatula to transfer the whipped cheese to a serving bowl or platter.

Ingredients

  • 13-16 ounces double cream brie
  • 1/4 cup fig jam
  • 2 tablespoons salted pistachios , shelled and coarsely chopped
  • 1 tablespoon honey , for drizzling

Instructions

  • While cheese is still cold, cut off casing using a serrated knife. If little bits are embedded, wait until the cheese has come closer to room temperature before gently prying them out using the tip of the knife. Some casing bits left behind will be perfectly fine.

  • Allow cheese to sit at room temperature for 30 minutes. While it can’t be too cold, you also don’t want it to be too warm.

  • Place the cheese in the bowl of a stand mixer fitted with a whisk or paddle attachment. Set it to level 2-3 and leave it to whip for 10 minutes, scraping down the sides of the mixer every 2 minutes.

  • Using a spatula, transfer the brie to a serving plate and create a well in the center using the back of a spoon.

  • Top with fig jam, sprinkle with pistachios and drizzle with honey.

  • Serve with crostini or crackers.
