The way this recipe is written can be very troublesome for an inexperienced baker. First of all, the recipe calls for baking soda, but baking powder is mentioned in the instructions. Second, the recipe calls for honey but this ingredient isn’t mentioned in the instructions. Moreover, the instructions say to preheat the oven in the first step, but the dough needs to be chilled for quite sometime (about 1.5 hours) before baking, so why keep the oven on that whole time?
To the inexperienced baker: it is baking soda, add the honey with the egg, and don’t preheat your oven until 15 mins before putting the cookies in.

    Aarthi,
I’m trying out you recipe today. A couple of things I noticed as I was mixing up the ingredients. In the list of ingredients you say baking soda. Then in the typed instructions you say baking powder. I had to research another recipe to see which might be correct. I went with baking “soda”. Also, in the typed instructions you do not state when to add the honey. Being an experienced baker, I figured it out. Perhaps you could correct these two items. It would be helpful for new bakers.

What's the difference between ginger snaps and ginger cookies? ›

Why are my ginger cookies so hard? ›

“There are some gingerbread recipes that are hard right after baking and need to sit for a few days to soften. Molasses and honey hardens gingerbread, but as the sugar absorbs moisture, it will get softer.”

Why didn t my ginger cookies crack? ›

Not enough leavening (it needs to be strong enough to crack the top once it's set) Using a single-acting baking powder (double acting gives extra rise when it gets heated) Not creaming the fat long enough (creaming cuts little air pockets into the fat, which means the leavening has to do less work)

What is the secret to chewy cookies? ›

Cornstarch helps product soft and thick cookies. Using more brown sugar than white sugar results in a moister, softer cookie. An extra egg yolk increases chewiness. Rolling the cookie dough balls to be tall and lumpy instead of wide and smooth gives the cookies a bakery-style textured thickness.

What is the secret to making cookies soft and chewy? ›

Baking cookies quickly in a hot oven – at 375 degrees F as opposed to a lower temperature – will make for soft results. They'll bake fast instead of sitting and drying out in the oven's hot air. Ever so slightly underbaking your cookies will give you softer results than cooking them the full amount the recipe says.

How to get cracks in ginger cookies? ›

A heavy amount of baking soda interacts with the molasses in this recipe to encourage spread. This allows cracks in the dough to develop where moisture escapes, creating that beautiful crackled appearance and crunchy texture. Ensure your baking soda is fresh and active – learn more about that here.

How important is molasses in gingerbread cookies? ›

From light to blackstrap, sulfured to unsulfured, the large variety of molasses options can be confusing. And one type will make your treats "frankly inedible." Molasses is the essential ingredient in gingerbread cookies, providing the chewy texture and almost burnt sugar flavor that characterizes the treat.

Why are my ginger cookies bitter? ›

However, with that amount of baking powder, your cookies (or any baked goods in which you substitute baking powder for baking soda) may end up with a pronounced bitter taste.

Are ginger cookies unhealthy? ›

Ginger cookies can be high in sugar and fat content. Ginger cookies fall into the category of "empty calories," according to the U.S. Department of Agriculture's dietary guidelines. You should consume empty calorie foods in moderation.

Why are my ginger cookies flat? ›

If your cookies consistently come out flat, you may have selected the wrong baking temperature. If you bake cookies using too much heat, the fats in the dough begin to melt before the other ingredients can cook together and form your cookie's rise.

Why are my cookies hard instead of chewy? ›

According to The Kitchn, this occurs when you over-mix the dough. Mixing the dough naturally causes gluten to develop in the flour, and while you do need a good amount of gluten to give your cookies structure, too much of it will result in hard cookies.

Why are my cookies hard and not chewy? ›

Under-Bake Your Cookies

Ever accidentally bake a batch of cookies for too long, only to find that they were crunchy and hard instead of soft and chewy? The opposite goes for under-baking. Pull your cookies out of the oven a minute or two early (while the centers are still gooey).

Can you fix crunchy cookies? ›
