Do you want to know how to set up a boodle fight?

If you’re interested in having one at your home, I can help you make that happen, but first let’s breakdown the history of the name itself.

What is Boodle Fight in the Philippines?

What exactly does it mean? A lot of us is wondering.

We call it Kamayan, which means eatingwith hands, orwe can call it Boodle Fight. Started originally from the Philippine militaries who share eating varieties of food on the table that is placed on top of banana leaves. Mostly dried, grilled, steamed, boiledand fried food are served and matched with different types of condiments as dipping sauce/side dishes that makes it more of a satiating experience. The combination and matching should be implemented so that they complement each other.
No plates, no utensils, only bare hands to use. Make sure to wash up really well before proceeding!Lol! This is how you will enjoy it. If you don’t feel comfortable enough or dare just to even try it, then this is not your style. I understand, it can get messy but this is where the fun of it all.Although the word “boodle” came from Dutch word-“boedel”, which means money, it also has different context like, collection of lot, mass. Anyways, The word “fight” is due to acting of fighting and grabbing while eating. Since these men are really starved before they even begin coming from battlefield or training. Thus, they have to eat faster so they won’t miss any. Most important though, this is to show the unity, equality and camaraderie of each and everyone from the academy regardless of their rank.

However, just for everybody’s information,Kamayan or eating with hands as we call it, is not done on a daily basis in most households in the Philippines. And so is the boodle fight. Yes, many people are accustomed to the tradition by eating with their handsbut they are using a platesans banana leaves.There arealso many, who stillprefersto eat using their utensils. The boodle fight craze just started popping up about 7-8 years ago especiallybefore government elections startin the Philippines.Campaign Managers would organize an eventon behalf of their candidatesin some of their targetedhometowns forcampaigning. They will set up an exceptionally long table in the middle of the street with different types of food.The candidate would thenjoin citizens eating with their bare hands while mingling around, thus, campaigning to people for their votes. Partof their strategic moves,why not, right?Now, it is seen more frequently since it has been going viral and almost everybody is doing it for the experience.

Some people find it fun and interesting, so a lot of filipino restaurants now started offering this style of dining. It has just now become a custom that is held on special occasions as well. I started doing this regularly since 2009 when it was not that popular yet. Since I love cooking and organizing parties, family and friends would sometimes request and I am always glad to implement it. I would cook some of the dishes and they would each bring viands for their own contributions. They loved it so I continue with the tradition whenever everyone agrees to havethat type of setting. I truly enjoy doing it for loved ones and seeing them devour and satiate their filipino gastronomic cravings.The smile on their faces while enjoying it is just so priceless. HOW TO SET UP A BOODLE FIGHT?

TOOLS NEEDED FOR SETUP:

  • Long table
  • Banana leaves(make sure you have more than enough to cover the table)
  • folding chairs
  • Lots of paper towels
  • Skewers if you are planning to make some skewers
  • Small wooden plates or bowls for condiments(you will need a lot of these, at least a dozen lol) with small spoon for scooping
  • Small soup bowls if you decide to have soup on the side
  • 3-4 Plastic bags for trash for empty shells/bones placed in 4 corners

FOOD NEEDED FOR SETUP:

  • Plain Rice/Garlic Rice/Java Rice
  • Lumpia shanghai(fried spring rolls)
  • Any Grilled or Fried marinated fish –Bangus (MIlkfish), Pampano orTilapia
  • Boiled/Steamed/Blanched Vegetables – okra, bittermelon, eggplant, Chinese long beans, yam leaves, watercress
  • Blanched shrimp, crabs, mussels, clams(they’re so good to just dip either in bagoong w calamansi/or lemon juice, seasonedvinegar or fish sauce with calamansi/lemon juice)
  • Roast pork(lechon)
  • Fresh oysters – just make sure you have someone who is willing andknows how to shuck them. Otherwise forget about it lol!
  • Green and yellow mangoes and other types of fruits like banana, watermelon, cantaloupe, papaya and pineapple etc
  • Salted Eggs – best paired with tomatoes, onions,and cilantrocut in small pieces. Chopped green or yellow mango is optional
  • Tortang Talong (Egg Omelet)
  • Grilled eggplant
  • One type of dish with sauce is ok but optional as well– like Adobong Manok,kaldereta, mechado, menudo or adobong Pusit or anything you can think of
  • Pinakbet – mixed stir-fry vegetables or anything simmered w coconut milk sauce
  • One type of soupdish is ok but optional as well – like pork, fishor beef sinigang, beef nilaga, chicken tinola(chicken ginger soup) No need to make a lot, just cook with more broth as people would surely just want a couple of sips while eating
  • Pancit Bihon,Sotanghon guisado orPancit Canton(noodle is a staple especially if it is someone’s birthday as it signifies long life)
  • Grilled street food – this is optional if most of your guests will be eating them. Warning: Beware of the food items that will be mentioned here as they might not be familiar to youor you find it unpleasantand get grossed out. Some examples are: grilled chicken/pork/beef intestine, pork liver/blood/ears, chicken feet, deep fried quail egg(kwek-kwek), kikiam(Chinese sausage), fish ball, squid ball
  • Condiments – are really necessary like vinegar with garlic, Calamansi/ Lemon with fish sauce, shrimp paste, chili peppers for those who wants spicy, soysauce with lemon juice, bagoong alamang(fermented fish sauce) with lemon juice,sweet and chili sauce for lumpia shanghai and last but not the least, the lechon sauce for the roast pork(lechon) if you will be serving it.Extra wedges of lemon or calamansi juice for rubbing into hands after eating and washing to take out the fishy smell thoroughly
  • Drinks – Fresh Coconut juice or in can is okay
  • Dessert – any filipino sweets you can think of is okay – turon(banana fritters), kakanin(rice cakes), halo-halo(mixed sweetened fruits and beans, coconut jelly and many more topped with shaved ice andevaporated milk)

FEW MORE TIPS FOR LESS-STRESS PREPARATIONS:

  • Thaw out banana leaves. You can take them out the night before the event. Note that you will still need to wipe them clean few hours before you setup the table, so set aside some time for this. I usually wipe them with water and oil. This way they stay moist and greener. Otherwise, they start getting crumpled anddry by the time you guys start eating
  • Appetizers are actually not needed, you reallywant tosave your appetitewith this type of dining
  • You can just choose couple of items or so from every food category that is listed above
  • To fully enjoy the experience,it must be asit-down dining, so everybody can enjoy, take their time eating while telling stories. However, this is more fun if there’s more people and not enough chairs and to eat standing up. That’s how the original boodle fight started anyways!
  • As the host, if you will do it with seating assignment, you must know exactly your guests headcount for assigned seating. You don’t want your other guests eatingstanding(wink-wink)
  • Since it is a sit-down dining, this means that everybody has to be present before anybody can eat. Once everybody has arrived, then you canstart taking out food that is okay to be eaten not too hot or not too warm i.e. steamed veggies, salted duck egg salad, cut tomatoes, onions, fruits.
  • Barbecued, skewered, grilled and/or fried shouldstay in a aluminum/baking tray inside the oven on warm temperature to preserve the heat until everybody is almost ready to eat
  • If you opt to order pre-cooked street food, please note that these ones are better eaten fresh from the grill. So you will need agrill(electric in-door is ok too)or you canput your oven into broil to re-grill them for a couple minutes
  • Make sure that your viands are spread out evenly so everyone can have easier access to each food category
  • Provide extra emptydip bowls, as some people would want their own
  • If you have soup, turn the stove and leave the pot on slow fire while you are preparing and setting up the rest
  • Late guests can’t be avoided, so it’s not fairfor those people who came early. I would warn them ahead of time to have some snacks or breakfast before they head out to the party or leave their house lol!
